Thai Red Curry Noodles & Veggies 🌿🍃

Recipe:
While the noodles cook, simply saute 1 (small) onion until translucent, at least 5 to 7 min in a bit of oil or water. Then add around 4 cups of chopped veggies. Saute a few minutes. Then add 1/4 cup Thai red curry paste, 1 tbsp. ginger paste or fresh grated ginger, 1 15 oz. can coconut milk, 1 to 2 tsp garlic powder (to taste), 2 tsp chili garlic sauce or other chili sauce, stir, cook until veggies are crisp tender. Add cooked noodles, 1 can of chickpeas (drained amd rinsed), and juice of 1/2 to 1 lime (to taste). If desired, add 1/2 tsp kosher salt. 🌿🍃🌿🍃
